Dinner 5/24

My husband and kids are at a friend's wedding. It's at 4:30 with a reception following. My DD has to be somewhere this evening at 8:30, so they won't be staying longer than 8 pm.

Dinner for one tonight. I put some bulk black beans and rice in the steamer. I will have that with some of the sliced berries for dinner. The rest will be taken to work for my lunch, and the berries offered to my coworkers.

    Can I ask you a question? A while ago I was given a 2 lb. bag of dried Pinto Beans. I had never made them from a dried state before today. Last night I soaked them and today I cooked them and I now have a HUGE pot full of yummy beans. What would you do with them? I know I can cook up some ground beef and add chili seasoning to make chili, but are there any other things to do with them that you know of? When we eat beans it usually kidney beans- those are the only types that seem to go over well with my husband and kids.

    I would put them in chili and burritos. I would also add them to a side dish for tacos, such s refried beans, top with a small amount of cheese, and sour cream.

    How about using as a "dip" for tortilla chips??

    You could also put into serving size portions and freeze the beans. It would prevent them from going to waste and use as a meal when the budget is tight.

  3. I was thinking about freezing the beans with some of the bean broth so they don't dry out. Oh, the dip idea sounds good- I think the kids would especially like that. And the next time we have tacos I could mix them in with the meat (use less meat) or as you said to use them as a side dish. Thanks, Debbie! :)
