The spaghetti sauce that was posted on this list has been moved into the freezer. I didn't want it to go to waste or be thrown out. Motzzerella cheese has been moved into the freezer. As posted, the meat situation is sparse, but I have about ten containers of "hidden valuable surprises" that contain various items, such as left over chili, left over veggie and sausage pasta sauce, chicken stock, and an assortment of other things. Any meals that are made and are left over will be incorporated into containers, labeled and placed into the freezer. This is how we are going to keep our budget within our goal of 300 dollars a month. I also plan to continue to donate to CCAP with each pay check (every two weeks, about 20 dollars worth of fruits and veggies from the outlet store).

Dinner 3/1

We are going to have a crock pot meal tomorrow. I have sour kraut in the freezer that I just took out. I have some marked down pork that I bought last night at the store. I found boneless pork stew meat that equals 1 and a half pounds. It is originally marked at 5.34 with a price per pound of 3.49. I found it marked down to 2.12 for the whole package of meat. CHING CHING....

Dinner 2/28

Dinner tonight was taco's. We used a pound of ground beef that was left over from yesterday's dinner and made these. I had a kit in the pantry and the ids cooked the ground beef and did most of the prep work. The dinner was great. I was thankful that I didn't have to cook.

I'm so excited...

I got my tax money and went out today to do a few good deeds. I bought 57 dollars worth of fresh veggies and canned goods to donate to the local food pantry. I bought a 115 gallon COMPOST BIN..for the back yard, and my husband even put it together. I bought a blue berry bush and raspberry bush for the yard (since we all ready have a few of each established), and I bought seed potatoes.

Apparently, my husband said "I have a rebel wife". Get real. This is an awesome thing.

Today's dinner

I went to the store and bought some stuff for chili. I bought two 32 ounce cans of kidney beans, 4 pounds of ground beef (We only used one pound, and froze the rest). We had tomato sauce, chili powder, onion, garlic, and diced tomato, with cheese ends. The rest of the chili will be put into the freezer in one cup portions for another night.

Tonight, we are having pork chops baked in the oven with sweet potatoes diced, and sliced onion topping the pork. I will make a veggie on the side, probably some green beans from the freezer.

What's been cooking...

I have to mention that we fell off the frugal wagon...Wednesday, I bought pizza for dinner, Thursday, we had chinese food...Friday, we went to Subway.


Tonight, I had to get myself back into gear. I put some diced tomato, garlic, onion, peppers, and the few pieces of italian turkey sausage in the crock pot. I added some parmesean cheese, and cooked some pasta...this was our meal tonight.

I'm working night shift all weekend. I am not off work until Monday morning.

I have a few health care obligations that have statements coming in. My daughter fell down the stairs a month ago. She went to the ER and had a CT of her head to make sure that she didn't suffer any ill effects. Those bills are coming in. My deductible was met with this visit, I'm waiting to see what the bills amount to. I will be paying these off very quick, as they put a dent in my planning process.

I managed to get our taxes done electronically at home. I was able to write off some mortgage interest (Wells Fargo A and B), some student loan interest, and four new pairs of glasses that I paid cash for in 2012. We are getting a small amount back from the state of VA, and a moderate amount back from the federal government. The returns have been accepted, I'm waiting to see that they have approved the tax forms. The web site states that it takes 21 days from when one files with the IRS. I filed on February 16th. I am not sure if I should open a savings account with my tax return, or pay off the Target obligation. The money from the federal government will pay off most of the obligation. I don't have an emergency fund, and according to Dave Ramsey's site, this is very important to have. I'm thinking that I may have answered my question.



KIA 277.11 a month PAID IN FULL as of January 2013.

JCPenny 202.00 total.l....100 a month. PAID IN FULL AND NOW CLOSED as of February 2013!!

Target 2680.31....150 a month (when JCP is paid, all is rolled into this account 377.11 plus the 150). We have about 6 or 7 payments to get this paid off in full. This starts in February with this weeks pay check.

Wells Fargo  (A) 25,000 YIKES! 90 a month, when Target is finished, everything will snowball into this account. It works out to 40 payments total! This will be paid off sometime in the future. I don't have a timeline yet for this obligation.

Student Loan 15,000 total another yikes! I pay 167.00 a month for my education. This is considered good debt as far as the government is concerned. This payment will continue until Wells Fargo A is paid off in full. When Wells Fargo A is paid off, then all the money will snow ball into this account until it is paid in full. I don't have a timeline for this obligation yet.

Mortgage 72,000 (was 90,000)  total....633.21 a month. I do pay my mortgage every month on time. I usually will add 100 dollars a month to the principle in addition to the regular payment. I have no time line when this will be paid in full.

My girl's graduation fees are paid in full, along with my other daughter's class ring....finally!!

inspection for one car DONE FREE!!!!!
Animals to vet on Jan 22 2013.... The animals have been to the vet, vaccinations provided, all got a clean bill of health!!

The only way to manage to get these things done, is to watch my finances very carefully. My husband does not work and has limited income (he sells things), and I can't count on any of that income to be steady. So, the best thing I can do is watch all income that comes into the house (mine is steady), and keep our expenses as low as possible.

I am going to list my debt, and my plans to get rid of this:

KIA 277.11 a month PAID IN FULL as of January 2013.

JCPenny 202.00 total.l....100 a month (when KIA is paid off, the money rolls into my JCP account 277.11 plus 100.00) This will start in Feb 2013!!!!!!!  PAID IN FULL AND NOW CLOSED as of February 2013!!

Target 2680.31....150 a month (when JCP is paid, all is rolled into this account 377.11 plus the 150).

Wells Fargo  (A) 25,000 YIKES!!!!!! 90 a month at the moment (when Target gets paid off, then the money will roll into this account 572.11 a month)

Essentially, I could have my bills paid, and mortgage free come 2023....is this a reasonable plan??? Yes, provided I can stick to it.

Dinner 2/15

Since I go back to work this weekend....all three nights and won't be off again until Monday, I have the makings for two (maybe three) cheese pizzas, and maybe the third will be a veggie pizza. I have all the flour, yeast, spices, oil, dry milk, salt, and sugar to put into my bread machine to do the work for me. This will be the crust for both pizzas. I have some opened spag sauce that can be used to top the pizzas. I have a pound of mozzarella cheese, and some provolone cheese that can be shredded to top the pizzas. We have diced tomato, garlic, onion, and peppers that can be placed to make a veggie pizza (for the adults).

This is a quick and easy dinner that doesn't require a lot of cooking time. I can do the prep this morning for the crust, shred the two cheeses, slice the veggies thin, and get the pizzas made before the kids get home from school. All I would have to do is bake them this afternoon. It's cheaper of me to make them pizza than it is to buy the local take out joint. Plus, I have everything we would need to make it a family time event.

Dinner 2/13

We have a package of turkey bacon in the freezer. I took this out to thaw. We will be having BLT's with the thawed bacon, sliced cheese, shredded lettuce, and a few sliced tomatoes. I have a lurking package of "rice roni" that needs to go.

The kids will end up having grilled cheese with some tomato or chicken noodle soup. They are not fond of BLT's (but do like bacon). The grilled cheese will be made on 0.79 cent bread, with real butter, and sliced provolone cheese. YUMMY!!

Dinner 2/12

Dinner tonight will be a package of turkey sausage (Italian style), with a can of diced tomato, a few cloves of fresh garlic, a sliced onion, a can of lurking mushroom pieces that I will chop fine (I don't care for big pieces of mushroom), add some parmesean cheese, and this will top some elbow pasta that was lurking in the pantry. We will have a very small salad also.

Dinner 2/11

I finished my work stretch and last night was so tiring for me. I laid around, slept some, and watched some news. I tried to catch up on some blog reading. We made belguim waffles for dinner. I have a recipe that I use that consist of flour, baking powder, some baking soda, vanilla, cinnamon, eggs, oil, and some milk. Mixing this together and using my waffle iron, put out some pretty awesome waffles for the family last night. I choose between the vanilla extract or cinnamon, and went with the cinnamon this time. It was pretty good!

We had tacos for dinner last night. My husband cooked one pound of ground turkey, used some lettuce, tomato, deli cheese ends, and one of two taco kits. This was a big hit with the kids, as they love tacos.

Tonight's dinner was fish sticks and macaroni and cheese. My son made the macaroni and cheese, as his request. My husband and I had one of the frozen veggie pizzas that I bought the other day at Sharp Shopper.

Night three of three at work, I don't usually cook when I'm working.

Dinner 2/6

We have some chicken drumsticks that I took out of the freezer. I used the lurking marinade that has been in my fridge. It is garlic and herb. I put the chicken, some frozen green beans, and sliced up two large carrots in a pan. I covered this with some marinade and put it in the oven. I also am steaming some long grain rice.

Monday's dinner

I worked Sunday night, it was very busy. I was asked if I wanted to work Monday for overtime and critical need pay. I did work, but went in early at 5 PM, instead of 7, which made my work shift 14 hours instead of 12.

This put a kink in our routine. I usually make dinner at 430 and have it together before anyone has to leave the house. Since my daughter also has a part time job, she likes to eat before going to work.

We had grilled hot dogs, a Lipton noodle and sauce package, and some corn.

I made four pork chops with mushroom gravy in the oven. We had steamed corn, a small salad (lettuce, tomato, some cheese), garlic mashed spuds, some homemade banana bread, and small apple crisp (using some going soft apples, cinnamon, some sugar, butter, and granola).

All that is left is some banana bread.

Dinner 2/2
