9/28 dinner, and 9/29 dinner, 9/30

I baked some turkey bacon, fried some shredded hash browns, and scrambled eggs. I had to work, and this was an easy meal to put together for the family.

My daughter made pancakes on Sunday from a recipe I have in my cook book. It was pretty awesome.

My husband is going to cook the steaks I found last month on clearance, with some oven baked potatoes, and a small salad. The steaks are bought for 11.97 for FIVE!!

** Items are opened and need to be finished up for meal ideas. I'm hoping to be able to cut some of my expenses for October. My kids need to go to the dentist and get some cavities filled,homecoming for my daughter,  have a consult for oral surgery, my car is getting an oil change and tire rotation, and the cat has to see the vet. My oldest has to sign up for spring classes, and that comes with a new round of tuition payments.

9/27 dinner

I am steaming some long grain rice to have with our left over chili. The chili will top the rice to help stretch it to feed five of us. The kids can choose between the chili or pot roast, carrot/onion/potato mixture. There's two small servings of roast left.

9/26 dinner

One very small roast (like 1 and 1/2 lb) will go into the oven (it's chilly here today, the kids will appreciate the warmth of the oven to get the chill out of the air), with a couple of diced carrots/potato/onion, and top this with the small amount of beef stock I had in the freezer, along with the lurking packet of onion soup.

I'm thinking of making a small vanilla cake and topping it with the lurking fruit from the freezer. We have two servings of strawberries, and one serving of raspberries. I would like to puree the fruit and add it to some cream cheese for frosting. Any thoughts??

Updated Life Events

Life events

The cat that is diabetic is not doing well. The vet is considering dropping his insulin and treating him with diet only due to the issues with his weight, and low values on glucose after one administration of 1 unit of insulin.  The new insulin vial is due to be refilled soon.
UPDATE: We stopped his insulin. his glucose tolerance test was low. The cost savings are 163 dollars a month for the insulin and 33 dollars for syringes. We are still feeding him a high protein diet at the cost of 55 dollars a month. 

May car is due for it's 51,000 mile check up in a month or so. We have 49 thousand miles now. So we have a little bit of time.
UPDATE: Can't worry about this yet, I still have some time prior to getting the tune up. 

The foot doc is being a regular, I need to get my blood work drawn tomorrow for Friday's appointment. I find out how much the insurance didn't cover for the needed x rays last week.
UPDATE: Got my lab work done, paid 25 dollars for co payment  Tomorrow will be another 20 dollars for the office visit. Still waiting on the costs for the xrays.
UPDATE: I paid cash for the co payments. No xray money was paid out for xrays. I go back in 6 weeks. 

Our other cat, Pepper needs to get his immunizations in October.
UPDATE: Not concerned yet. 

My middle daughter and son are planning on going to the homecoming dance in October.
UPDATES: My daughter wants to go to homecoming. I requested that we look at dresses in her closet first.
UPDATE: I bought her dress for 42 dollars, and a hair piece for 2.00. She will have to wear her own shoes, and get hair done by friends. Enough said. 

We went to the dentist yesterday. I made it out with ZERO cavities, as did my son. My two girls have two cavities each that need to be filled. One girl needs sedation to get the work done. My daughter needs to get her wisdom teeth out. We have been referred to an oral surgeon for general anesthesia and extraction of all four at once. I can't keep her awake to have the work done, she will not be able to handle the anxiety.
UPDATE: I sent the paperwork off for the referral to the oral surgeon. No other progress noted. 
UPDATE: The girls go in October to have their cavities filled. 152 dollars each, with sedation cost for one.

Plumbing Issues are repaired and paid for. I paid with my debit card and replaced the cash from my savings account into my checking account. I wanted to avoid overdrafts. 

Times like this, I am worried about our income and being able to handle the ongoing stress that comes with having only my income.






9/25 dinner

I have four containers of spaghetti sauce with sausage, peppers, onion, and garlic in a pan. These are part of those hidden surprises I had thawed from the freezer. I will cook some pasta and have a side of broccoli, and a small salad.

9/24 dinner

Since the chicken noodle soup I made is gone, we are going to have chili tonight. I took out the "hidden surprises" that had tomato sauce in it. There were two of them with no meat in it. I put those in the crock pot with a yellow pepper, onion, three cloves of garlic, and a red pepper. I added some lurking corn that was in the fridge. I opened a can of crushed tomato, and three cans of kidney beans and added all this to the crock pot. I used 1/8 cup of honey into the crock pot, added some basil, paprika, and chili powder.

We will have a small salad too. This is our second night of "meatless" meals. That's dinner folks.

Dinner 9/23

I worked all weekend, and just got up a little bit ago. A few days ago, I took out all of our "hidden surprises" from the freezer. We had numerous cups of chicken stock, a few containers of frozen fruit, a container of beef stock, and numerous containers of homemade spaghetti sauce.

Tonight's dinner is chicken soup. I took all the chicken stock in containers, and put it into a pot. I used one container's "gelled fat" at the top of the container to saute some onion, parsley, and carrots. After I cooked them, I dumped the veggies into the pot. I added some thyme, celery salt, and of course, the stock has the previous seasonings from the meals I've cooked. I added a little water, and let this simmer for about 40 minutes. I'm boiling a two cups of egg noodles to put into the soup when it's finished.

That's dinner folks. It's a cheaper, healthier version of Campbell soup. It's pretty much free from all the lurking items, and left over veggies.

Working, Plumbing, and Dinner...

Friday evening the plumber finally came. We had the water turned off all day. We went out for pizza, and paid the plumber 200 dollars. My carpet is damp, and the leak is repaired. Such is life. I worked Friday night.

Saturday, my husband sold some of his stuff. He bought Subway for dinner. I worked.

Sunday, my husband and kids were cleaning house. My kids made a nice salad, mashed potatoes, and breaded pork chops. We are going to have corn with it. I need to work tonight.

I am tired, exhausted, and just worn out. I paid cash for the leak, and will transfer the money into my checking account tomorrow, so we don't have any overdrafts.

We are waiting for a estimate for copper piping through out the house.

came home from the doc to get another injection of cortisone for my right foot. I cane home to a water leak in the plumbing. We called the plumber, he will be here this afternoon, and we shut off the water.

Good thing I have cash in my savings account to pay for emergencies like this.

Life Events Updates

Life events

The cat that is diabetic is not doing well. He went to the vet for a glucose control and found that he continues to lose weight. He had some blood work drawn for the dreaded cancer diagnosis. The vet is considering dropping hos insulin and treating him with diet only due to the issues with his weight, and low values on glucose after one administration of 1 unit of insulin.  The new insulin vial is due to be refilled soon.
UPDATE: We spoke to the vet, and are considering stopping his insulin and managing with diet only. That would be a relief. 

May car is due for it's 51,000 mile check up in a month or so. We have 49 thousand miles now. So we have a little bit of time.
UPDATE: Can't worry about this yet, I still have some time prior to getting the tune up. 

My daughter went to her doc, new meds have been ordered.
UPDATE: We picked up her prescriptions, paid cash for them. Enough said.

I have started sending them 300 a month (as of September 5th) including their original minimum amount. I would like to send the 572.11 as a snowball amount, but we've run into a lot of vet bills, and such. My new balance is 24,500.00. I make my regular 90 dollar minimum (interest only) today, along with a 200 dollar to principle. 

Student Loan 15,000 total another yikes!!!! 167 a month...will keep this amount until Wells Fargo A is paid off. (when the above is paid off, then I will put 572.11 a month and the normal 167 towards this loan). New balance is 14,405.22.

Mortgage 72,000 (was 90,000)  total....633.21 a month. I paid October's payment this morning. I threw away the newest statement prior to noting the updated balance. 

My goals are to have at least another 585 to the living expenses by the end of 2013. I am not sure if it's reasonable or not. I had wanted to put 400 in this month and was only able to put in 400 total, but 125 of that was to reimburse from what I took out in August. 

I would like to see the Wells Fargo account hit the 23 thousand mark, but I think that may be putting to much pressure on me. The student loan and mortgage will be accounted for, with minimum payments only. I wouldn't mind taking 1 thousand out of the savings account to send to the Wells Fargo, but I'm scared that something would happen at home, and I wouldn't have my safety net. I like to be able to sleep at night.

Got paid...

I wrote out October's mortgage, the electric bill, the equity loan (I paid the minimum, and sent in a 200 dollar extra to the principle), my daughter's tuition, car insurance, and doc appointment. I went to Aldi and bought some groceries.

I gotta say, that I don't go to Aldi on a regular basis. I usually go to Sharp Shopper (a discount store). Aldi seems a little expensive compared to Sharp Shopper (but Sharp Shopper is a close out store).

I bought two tomato, one cucumber, 10 lb potato, 3 lb onion, 2 lb carrots, 3 lb apples, and  2 lb bananas.

I spent 126 dollars and don't seem to have much, but I guess it will do for two weeks. I did buy more ground turkey even though we had some in the freezer. I'm worried that the prices will sky rocket and want to keep my pantry filled with items we use at the lowest possible prices.

I did put 200 dollars into my savings account.

Plan for 2013.....updated.

The only way to manage to get these things done, is to watch my finances very carefully. My husband does not work and has limited income (he sells things), and I can't count on any of that income to be steady. So, the best thing I can do is watch all income that comes into the house (mine is steady), and keep our expenses as low as possible.

I am going to list my debt, and my plans to get rid of this:

KIA paid off in full as of Feb 2013.

JCPenny paid off in full as of April 2013

Target paid off as of July 2013.

Wells Fargo  (A) 25,000 YIKES!!!!!! 90 a month at the moment
I have started sending them 300 a month (as of September 15th) including their original minimum amount.

9/18 dinner

We have a pound of penne pasta in the pantry, along with a jar of "garden chunky" spaghetti sauce. We will have pasta and sauce for dinner with the choice of Parmesan cheese for topping the sauce. I will steam the last of the "Italian veggies" AKA carrot/broccoli/cauliflower mix to go with it. I will use the bread ends to make garlic toast.

On the other hand, I had a credit of 30 dollars at the dentist. I paid 34 dollars for fluoride treatments, 20 for gas in my car, and 137 for the vet. I didn't take any out of my savings account (which I am thankful). My bills are paid in full, there's not a lot left over right now to cover extra expenses. I did take some call time last night at work to help cover for emergencies. I get paid tomorrow, and have one OT shift in that check.

Dinner 9/17

We have a busy day. The kids are at school, I took Butterscotch to the vet for his glucose testing. I get to pick him up later today. The vet will call when he's ready. We have to be at the dentist for one. The kids will be picked up and four out of five are going for check ups, cleanings, and xrays. My insurance will pay 100 percent for cleanings. It's the fillings and cavities that seem to get me. My insurance will pay 60 percent, I pay 40 percent. I'm hoping that all four of us come out clear, no cavities needed.

Needless to say, dinner tonight will b something soft and easy to chew. Our hygentist is a little over enthusiastic in her care. We are going to have pancakes and scrambled eggs.

The pancakes are going to use the last lurking apple butter instead of oil (which I am short of). I would like to get rid of this item, as it's consistently shown up in my pantry listings. We will make some scrambled eggs (no milk, we are out) with it to help with protein intake.

Dinner tonight was the last of our 7 potatoes, sliced thick and fried in oil. IE FRENCH FRIES

Dinner 9/15

Dinner tonight will be left over chicken, carrots and potatoes. We also have some lurking potato salad that needs to be used today. I have some salad fixings that also need to be used up today. These things are looking like they could go at any moment.

1/2 jar of creamy peanut butter
one container of crunchy peanut butter

two servings of crock pot chicken
one serving of potato/carrots/broth
several servings of potato salad

1 and a half lb corn

Frugal Activities...

getting outside pruning 7 rose bushes
made 48 peanut butter cookies for the kids (from stuff in my pantry)
washing clothes in cold water, with 1/8 cup laundry detergent
hanging clothes outside
cleaning up the kitchen
sorting recycling (we recycle cardboard, plastic (all kinds), and sell a metal cans/containers/etc to a metal shop for 64 cents a pound)
paid the bills two weeks ago
planned dinner for tonight
lit my one jasmine candle
took some veggie peelings out to the compost bucket
listening to the radio
my car is parked (until I go to work tomorrow night)
loads of walking around the house cleaning (exercise helps perk up my mood)
getting free sunshine while being outside!!

I count my blessings, knowing that I have my health, my great career (90 percent of the time), a good bunch of kids, and a husband that loves me. I an thankful that I have medical and dental insurance through my job. I am thankful that I have a savings account that will hopefully help us in harder times.

I am thankful that my car is maintained, runs well, paid off, and only a 2008 with 49 thousand miles....yeah, I know, BIG DRIVER!!! HAHAHHAHA...not really. My husband drives my car to pick me up and drop me to work.
