left over chicken...

We have three left over chicken thighs in the fridge, and two cups of stock from the other night in the freezer. I'm going to incorporate these items into a chicken and dumpling dinner tonight. I don't have all purpose flour, but will use whole wheat instead...this will go pretty nice with a salad on the side. I am going to adjust the serving size, as the recipe below feeds 20 people, I am only feeding five.




Change Servings
 7 pounds cut up chicken pieces
 4 cups chicken stock
 2 onions, chopped
 3 stalks celery, chopped
 3 teaspoons salt
 1 egg
 1/4 cup milk
 1 1/2 cups all-purpose flour
 1 1/2 teaspoons baking powder
 2 tablespoons unsalted butter
 2 tablespoons chopped fresh parsley
 1 cup water
 1/2 teaspoon ground black pepper
