BTW-leftover turkey can easily be disguised in Mexican dishes such as tacos, chilli, enchilladas. I also make "pulled pork" using leftover poultry and whatever bottle of BBQ sauce I have on hand. Dump it into a Crock pot and let it go all day. Turkey stock can be used in a pea soup for extra nutrients, and the seasonings will disguise the turkey taste. HTH
I have also done some of the things CTMOM has done when I have leftover turkey. I have made enchiladas and put it in the crockpot with some bbq sauce or made soup, tetrazzini or turkey salad from it. When I get "turkeyed out" I take whatever is left off the bones and cut it up and put it in a freezer bag or container and freeze it for a few weeks until I am ready to have it again. :)

ReplyDeleteWe end up freezing it. I will more than likely use it for a soup or turkey salad in the future (end of January, beginning of February).
