We have a very tight month ahead of us. Graduation party and dinner for my daughter, and my other two children want to have a end of the year party. We have Father's Day to celebrate. My daughter has a birthday party to attend.

I thawed out the last of our Italian sausage, sauteed the following veggies in olive oil on the stove:

one onion
the last two carrots
the last of the celery
two cloves of garlic
one soft tomato

I am cooking the italian sausage. I added the sauteed veggies to the crock pot. I opened our last can of diced tomato, added that to the crock pot, along with some dried basil. I'm waiting on the sausage to cook. I will put that into the crock pot and let it do it's thing.

Later today, I will boil some spaghetti to serve with this.

5/29 dinner

Tonight's meal was scrambled eggs, fried potatoes, and sliced ham.

I used the last 8 eggs. I peeled and diced 10 very small potatoes and fried the in some real butter with onion. I had two small packages of ham in the freezer (remember that four lb ham I used a while ago...well this was the lurking let overs in the freezer).  I used the hot plate to warm up the ham, while making the eggs and potatoes. Overall, a win win for everyone. There's two small pieces of ham left for someone.

The tale of a Spatula

it is my best friend....wanna know why???

well, I had two containers of peanut butter in the pantry that were almost gone. I used the spatula and scraped the last of it out pf both containers. We had about one cup total. We made peanut butter cookies!!

Flour, eggs, baking soda, small amount of milk, real butter, and some sugar...turns into goodness!!

Saturday and Sunday dinner

I made pasta and sauce on Saturday, with Italian veggies. On Sunday I've made meat loaf with ground turkey, oatmeal, eggs, spices, soy sauce, and a small amount of milk. I topped this off with some BBQ sauce. We are having the last of the jasmine rice, Brussels sprouts and broccoli.

5/24 dinner

I had two servings of bean soup left over from last night's dinner. I put in single serve containers and placed it in the freezer. Tonight, I have left over chicken and veggies, or two homemade waffles and fruit. The kids can pick and choose which they would rather have. I will take what's left over to work tonight. That's dinner folks!!

ham and bean soup

I will be using two 28 ounce cans of pinto beans, a few stalks of chopped celery, a few carrots, a nice ham bone I had in the freezer, and a cup of chicken stock from the other night's "sticky chicken". I am going to put this in the crock pot and let it simmer all day. The kids love it, my husband loves it!!! It will make the weekend go easier when I have to work. We will have some left overs!!

5/22 dinner

Well, we are going to have breakfast for dinner. I am going to use our waffle iron to make waffles. We are going to use a recipe in my cook book with flour, oil, eggs, milk, and baking powder. I will add some vanilla to the mix. Topping the waffles will be some pancake syrup  along with strawberries or apple slices on the side. I have some fruit that is lurking and needs to be used up. Any left over waffles (who ever heard of such a thing) will be put in the freezer for an easy breakfast.

Saving Money

when trying to save money on a daily basis..there are a few things that I can do.

  • wash clothes in cold water
  • hang them outside to dry
  • use everything in my pantry
  • eat the groceries that we have, instead of buying more
  • using all left overs, getting creative with what's available.
  • open the windows
  • close the blinds in warm weather
  • turn on the ceiling fans
  • garden (it helps with exercise and stress relief)
  • recycle, reuse, resell
  • go without!!
  • Make your belongings last longer by taking care of them
  • cook meals at home
  • barter with a friend (haven't really tried this one though)

5/21 dinner

I put a 4 lb whole chicken in the crock pot with a "sticky chicken recipe". It consist of two onions, some carrots, celery, a rub of sorts. The rub consist of paprika, onion powder, garlic powder, pepper, thyme, and parsley. One would rub the chicken down with this spice combination and put the chicken in the oven at 250 for five hours. It's very warm here, and I don't  want to add to the heat in the house. I put it in the crock pot. It will cook all day, and we will have a small pasta salad to with it.

Haven't been posting...

Life has been busy the past few days. I haven't posted. I will tell you that friday was my husband's birthday. We had a GREAT but EXPENSIVE day together!!!!! Saturday and Sunday I worked night shift. On Saturday, we had left overs from Friday's birthday celebration. On Sunday, we had a kid choir event, a picnic and concert. My girls planned on chocolate chip cookies and potato salad as our offerings.

Dinner tonight was left over potato salad, hot dogs.

May 15th dinner

I have all kinds of bread crust ends in the freezer. The kids don't like them on sandwiches. So when the loaf of bread is finished, I usually put the ends in the freezer until there's enough to feed the five of us french toast.

So, we are going to have french toast tonight, with some sliced ham (from our previous 4 lb ham that we cooked a few weeks ago). I had sliced the ham and froze it for future uses. Our french toast will be from the bread ends, some double strength vanilla, a few eggs, and reconstituted milk. I will cook it on our hot plate, along with the ham. Topping the french toast will be pancake syrup.

Dinner 5/14

Dinner tonight consist of spaghetti, sauce, and meat balls. I used our last pound of spaghetti, and the jar of sauce that was in the fridge. I thawed out a pound of ground turkey, added two eggs, a touch of soy sauce, garlic, onion, basil, and I put some lurking almost out of date mini wheats (I put these in the blender first to grate). I mixed everything together, used a small ice cream scooper (makes great 1 inch meatballs) to place them in the casserole dish. I topped this with the spaghetti sauce and placed it in the oven.

Dinner 5/13

After cleaning up the kitchen today, we are pretty stocked with left overs for the week. I have left over chicken, potatoes, carrots, celery and onions from Saturday. I have leftover beef, potatoes, carrots, onion, and celery from tonight. We also have a lot of left over salad that will be used to supplement tomorrow's meal. The kids can pick and choose which they prefer.

I have some bananas that are going ripe. I will make some banana bread in the AM. I also have some apples that need to be used. The apples will be made into cinnamon applesauce to go with dinner tomorrow.

Mother's Day Dinner

My husband used my ATM card to buy a beef roast at 5.99 lb....HOLY CRAP!!!!

So, we are going to have potato, carrots, onion, celery, and the beef, along with a nice salad for dinner.
Butter Pecan ice cream for dessert.

We have some lurking items. For dinner tonight, we will be having grilled cheese and tomato sandwiches, using the lurking junk white bread, american OR provolone cheese, and a small tomato.

I also have a can of beans in the pantry, along with a package of pasta and sauce.

Breakfast 5/11

I made scrambled eggs for six people. I added some reconstituted dry milk, and several slices of american cheese to it. we had a few slices of raisin bread and junk white bread, so I made toast to go with it. Overall, a win win.

It's been crazy

...in my life this week. I was "on strike" at home. I was refusing to cook, clean, or do much except sleep and go to work. My family was not helping out at home. We are a LOT of take out.

Dinner 5/3

My daughter made brown rice, and left over chicken. (the last of what wasn't used for chicken salad).

Lunch today


Since the kids are off of school today for a teacher work day, I am going to take the last of the chicken that I cooked the other day , and make it into a nice chicken salad.

I will chop the meat, add some sliced grapes, diced apple, a small bit of tomato, celery, carrot, and some mayo. This can be served on junk white bread, or crackers along with some banana for lunch.

May Obligations...

Well, I found something nice out this week. May has three pay checks!!!!!! I paid 3/4 of my obligations for May. I put 200 into my living expenses account at the bank for a total of 600.00. I have a full emergency fund of 1000.00 in the account at the bank.

Checking the mail yesterday, we recieved our car taxes for June. The two of them will be paid by the end of May. My daughter has her prom to attend. My husband has a birthday to celebrate.

June brings my daughter's graduation, and summer vacation for the kids.
