Grocery Shoping

I went to food lion this AM. I was wandering the aisle and found some mark down meat specials. 4 packages of chicken thighs, with 4.5 lbs in each, for 0.68 a lb price.....ching ching.

I also found a marked down package of pork chops for 3.77 total.

I found two packages of beef short ribs on mark down. One was 6.00 and the other was 0.97


I bought the 97 cent one.

I have numerous pounds of ground turkey in the freezer. I have older lurking taco packets in the pantry.  I cooked one lb of turkey, added some taco seasoning, and we will be having taco salads and spanish rice for dinner.

Been working....

I've been working 60 hours in five days. We have had cereal and milk, take out pizza, pasta and sauce, ham and soup, and egg omelettes for dinners.

Tonight's meal consisted of home grown potatoes, fried in butter, with a side of home grown green beans, raspberries and blueberries that I picked from my yard.

I took all the meat that I could get off the ham bone. I sliced the meat and placed it in the fridge for sandwiches. I used the ham bone in the crock pot with four cans of pinto beans. We are having ham and beans for dinner. Nothing fancy, but good wholesome filling meal for hungry tummies.

Dinner tonight was the 6 lb ham I bought last week. I baked it, steamed the last of our brown rice, and warmed up some green giant steamer packets (rice, I know, peas, mushrooms, and gravy). The brown rice was a lurker, and so was the green giant steamer packs. They are gone, and I will keep adjusting our frozen veggie intake to increase use of those lurker items.

The ham will be sliced and packaged for another meal. The bone will be made into bean soup at some point.

Tonight's dinner will be hot dogs, baked beans, corn on the cob, and fried potatoes.

The hot dogs can be topped with onion, relish, ketchup, and/or mustard. The baked beans are canned. The corn on the cob will be topped with a small amount of butter. The potatoes will be fried with some onion and butter. YUM!!

The potatoes were lurking in the fridge. Everything else was bought last Thursday when I got paid.

Summer vacation with the children....

Well, it's that time of the year...summer vacation. The kids are out of school. They are tired, crabby, and hungry. My kids asked this morning if we could go to McDonalds, Chick Fil A, and Chipotle....and it's only a few minutes past one in the afternoon.

We had breakfast this AM.

Two egg omelettes with colby cheese, and deli meat ends (ham diced up).

I need to keep up in the kitchen or else they will eat everything in sight and still ask to go out. Any thoughts??

I am almost done with June's extra expenses!!!

I paid two tax bills for the vehicles DONE.
My daughter is graduating on Friday DONE. She wants to celebrate at Olive Garden DONE.
I had to buy her a pair of dress pants and a nice top DONE.
My husband's computer died, I bought him a new one yesterday DONE.
My Mary and Kevin are going to have an end of the year party. DONE
My kids are going to need pool passes this summer.
We have Father's Day to celebrate DONE!!!
My daughter has a birthday party to attend DONE.
Our toilet broke, and that had to be replaced. big bucks DoNE!!


I am going to work on using what we have, to help decrease the cost of feeding five people this month.
This month is tight with finances.

I have a full emergency fund of 1,000. I did make a deposit in the bank towards my living expense fund. I now have 1,097 it. My living expense fund goal is 5,000.

Father's Day Dessert


I made a pound cake using the frozen surprised Cream cheese frosting, and picked raspberries from my garden....a nice dessert.



Original recipe makes 2 - 8x4 inch loaf pansChange Servings
 2 egg whites
 1 egg yolk
 1 3/4 cups all-purpose flour
 1 teaspoon baking powder
 1/2 teaspoon baking soda
 2/3 cup milk
 1 tablespoon vanilla extract
 3/4 cup butter
 1/2 cup white sugar
 1/4 cup confectioners' sugar
 1/4 cup brown sugar

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch loaf pans. Sift together the flour, baking powder and baking soda, set aside.
In a medium bowl, cream together the butter, white sugar, confectioners sugar and brown sugar until smooth. Add egg whites and egg yolks, beating after each addition. Stir in the vanilla. Stir in the dry ingredients alternately with the milk. Divide the batter evenly between the two pans.
Bake for 60 to 70 minutes in the preheated oven, until a toothpick inserted in the center of the cake comes out clean. Cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

Using up those frozen surprises...

AKA containers that are not labeled...I put five containers of chicken stock in the crock pot. The stock had spices, carrot, onion, and celery in it. I added eight diced potatoes, and a slice of lurking ham that was found in the freezer. We are going to have potato soup for dinner. I will add some colby cheese to each serving this evening.

Frugal, hearty, and filling.

Dinner 6/11

We are going to have waffles tonight. Here's the recipe:

2 eggs
5 teaspoons sugar
1 and a 1/2 teaspoons vanilla extract
1/2 cup butter
1 tsp salt
2 and 3/4 cups flour
2 cups of milk  (we use powdered milk)

We are going to use our waffle iron. It's usually a big hit with the kids.

All those containers....

of frozen surprises have been placed in the fridge to thaw out. They will be incorporated into meals, using those opened bags of veggies that I have in the freezer.

There's one container of cream cheese frosting (thinking cup cakes later this week), five containers of chicken stock, two containers of Italian sausage with peppers, onion, and tomato, one container of bean soup, and one container of chili.

I may make some soup with the chicken stock. I would only have to add some pasta or rice. The Italian peppers, onion, tomato would be nice over some pasta. The bean soup and chili are single serve containers. Those would be available for maybe lunches, since the kids will be out of school on Friday for the summer.

Dinner 6/10

I am going to make turkey meatballs, finish off the last of the pasta, and the rest of the spag sauce. I am going to use up some lurking crackers, lurking soy sauce (older take out packets), a few eggs, and multiple spices. I will bake off the turkey meat balls. We are going to have some "Italian" veggies to go with it.

Open veggies....frozen surprises!

Cleaning up the kitchen and going through the freezer, I found numerous opened bags of frozen veggies. i organized the freezer and put what was open on the bottom pull out shelf, along with the meats that were in there. I have the unopened veggies and frozen "surprises" AKA containers with left overs on the top shelf.

Well, how many opened bags of frozen veggies may one have.....3, 4, or how about 5. I have five bags of opened veggies, and two of them are corn, one broccoli, and one Brussels sprouts, along with Italian veggies.

It gets better....I have ten containers of frozen surprises....TEN!!! Some of them are labeled, some are not. I know there's a bunch of chicken broth , some spaghetti sauce, cream cheese cake frosting (forgot about this, was at Easter), and can't make out what else. We will have to have a thaw and see party.

I put what was left of the chicken in the fridge. I took the chicken broth and placed it in a bowl and will freeze it in the AM.

Desperate for snacks...

We had four apples and three bananas sitting on the counter. I ended up making a huge apple crisp with diced apple, lots of cinnamon, some sugar, real butter and oatmeal topping...this went into the oven.

I also made a pan of banana bread and a small batch of muffins (dough that wouldn't fit into the bread pan). Some flour, bananas, eggs, vanilla extract, baking soda, milk, and salt turns into goodness!! I also added the lurking cream cheese that I was trying to get rid of.

My husband's computer died, I bought him a new one yesterday DONE.
My Mary and Kevin are going to have an end of the year party.
My kids are going to need pool passes this summer.
We have Father's Day to celebrate.
My daughter has a birthday party to attend DONE.
Our toilet broke, and that had to be replaced. big bucks DoNE!!


I am going to work on using what we have, to help decrease the cost of feeding five people this month.
This month is tight with finances.

My garden is producing. I have lots of strawberries I picked the other morning. My black berry and blueberry are producing, but the fruit is not ripe yet. I have potato, onion, and garlic producing, but it's too early to harvest any of it. My cucumber has nice leaves, my tomato plant has three small fruit on it, and the green beans are beginning to produce.

Dinner 6/6

Dinner last night consisted of frozen corn that was steamed, and italian apple sausage that we fried with some onion. That was it!!! Nothing fancy, but pretty good.

Frugal meals

Last night we had scrambled eggs. Easy!!
Tonight, we are having homemade artisan pizza. I bought whole wheat crust at Sharp Shopper. 12 inch for 69 cents. I bought four of them. I will top them with some lurking spaghetti sauce, and motzerella cheese, basil and garlic.

What's been cooking??

So far for June,, I have spent NOTHING!!! My husband did sell some of his comic books and proceeded to our pantry items. I say that I spent nothing because this extra cash that he received did not come out of my budget.
