Dinner tonight

I took the meat off the bones for the stick chicken, served three different kinds of veggies, and the left over brown rice. We have a crock pot full of beautiful chicken stock. I will put the skin and bones in the crock pot after we are finished and make another batch of chicken stock for the freezer.

We are blessed to eat well on a limited budget.

  1. You are blessed to be able to plan well and spend well on a limited budget! Anyone can. Most don't who have a limited budget.

    1. We have a small budget of about 300 dollars a month. I get paid every other week and there are times that on my pay week we don't go to the grocery store becuase there are other bills that need to be taken care of first. The house bills and mortgage come first as they should.

      My daughters will go out and buy some groceries every couple of weeks. They will pick up some pet supplies (litter, dog food, cat food), their own snacks (they are required to get their own snacks as I don't buy their sodas and junk food), they will buy their brother some soda (sprite as he is not allowed to have caffiene), and every week they are required to give me 10 percent of their take home pay as rent.

      They work at a dollar general and make 8.50 an hour so I asked them to give us 10 percent which ends up going into the gas tank every week since we are driving them back and forth.

      My husband does contribute 300 dollars a month and when he has any extra money (he is on a set income through social security due to his mental health) he does get some groceries. I try to plan as well as possible to prepare meals that are within our budget.

      When I am working the meals are not rounded out as a starch, veggies, and protein because my kids or my husband do the cooking.
