Menu Plan and What's for dinner??


What we had planned:

10/25* tacos with trimmings (left over meat to the freezer, trimmings become salad for tomorrow)
10/26* Beef stew (beef in the freezer, potato, carrots, onion, garlic in fridge, spices in lazy susan), salad (if any from 10/25 left)

10/27* Left over beef stew, steamed veggies (broccoli or peas)
10/28* Spaghetti with sauce, garlic rolls (left over pasta for 10/29, any sauce left over for pizza)
We are having this tonight, my husband is making it. The left over sauce is in the fridge for pizza, and there was no left over pasta.

10/29 hot dogs, homemade scratch mac and cheese (white sauce, with cheese added, pasta), broccoli or peas
10/30* scrambled eggs, shredded hashbrowns
10/31 crock pot whole chicken (broke down, deboned, skin taken off , for stock purposes), carrots/potato/onion (left over chicken for 11/01) (freeze stock)
11/01* BBQ chicken, home made french fries, steamed veggies
11/02* any left overs
11/03 *home made pizza (using previous spaghetti sauce from 10/28)
11/04 * Brocolli and cheese quiche
11/05 Home made chicken soup with egg noodles (freeze left overs)

11/07 French toast (with pumpkin spice bread in freezer)
11/08 Meat loaf (using ground turkey), mashed potatoes, steamed veggies

I put a few carrots/potatoes/onion/two packets of take out soy sauce (finally gone), a pound of beef stew meat/ and spices in the crock pot on low. 
10/29 We had left over beef stew, broccoli  and salad. The veggies are gone, the one serving of stew that was left after having left overs was placed in the freezer. 
10/30 Two egg omelettes with diced ham and cheese, shredded hash browns
10/31 I put the pantry items in the AMB for pizza crust. 4 cups flour, yeast, sugar, salt, oil, water in the ABM, let it mix and rise, use the left over Spaghetti sauce, and top it with shredded cheese. This will bake in the oven for 15-20 minutes. That's dinner folks!!

Dinner

Omelettes with diced ham, cheese, and shredded hash browns. I am going to use two eggs per person, some powdered milk, and make onelettes, add some diced ham (taken out of the freezer), and diced up cheese slices. I will brown the shredded potato in oil and serve!!

Other than the posted credit, I only have the regular house stuff, like electric, cable, phones, car insurance, internet, etc etc. I worked hard last year and earlier this year to get my smaller "debt" paid off, like some medical bills, JCP card, car payment, and my husband's credit card.

Student Loan 15,000 total another yikes!! Old balance is 14,430.84.
The new balance is 14, 321.13 as of October 28th 2013. I give them a 167 a month as their minimum payment.

What do to with left over homemade bread???

Why, you put the half a loaf in the blender, and grate it into bread crumbs. Two cups worth to be exact, label the container, and place it in the freezer!!!!

What a way to be resourceful and keep left overs in check!!!!

Working on a two week menu

So, I usually don't make a menu plan for any specific period of time. What I do is decide usually the night before, based on what we've had recently, what needs to be used up, and if there are any left overs that need to be eaten, and what is happening in the freezer.

Well, I figured that since I was working the next nine out of eleven nights (big sigh, overtime see the * marking for work nights), and then was on a small vacation (at home), I would attempt this and see how it works out.

Since it is written down, and I spoke to my husband about it (he was OK with it), it is not set in stone. We can change things around when needed.

I have everything in the freezer and pantry right now for these meals. I figured that I would try meal planning and see how it goes for two weeks. The menu can be switched around if needed. It is not set in stone.

10/25 dinner

We are going to have tacos. I have shells in the pantry, 2 lb of ground beef (my kids wouldn't have enough with only one lb of meat...big carnivores) thawing, some lettuce, tomato, onion, and cheese (I bought some yesterday, will use the blender to grate this), and taco sauce.

The lettuce and tomato will be chopped, diced, along with the onion. The cheese will be grated in the blender. The ground beef has been delegated to my husband to cook, with taco seasoning. The girls will place the taco shells in the oven to warm up.

Since I have to work tonight straight through until Tuesday morning, they are responsible for making sure dinner is ready at 4 pm. I'm hoping that they can work together to make this happen. It's reasonable, it's just dinner.

Bread



I'm attempting to use my bread machine for the first time in a long while. I'm making one loaf of white bread, using the following recipe. I hope it turns out awesome. I did use all purpose flour because that's what I had in the pantry. 


  1. Place water, sugar, salt, oil, bread flour and yeast into pan of bread machine.
  2. Bake on White Bread setting. Cool on wire racks before slicing.

Dinner 10/24

Dinner tonight is going to consist of two homemade pizzas. I have two pizza crust mixes in the pantry, along with numerous canned tomato items, and mozzarella cheese in the fridge. I figured that the kids would like some cheese pizza with either chicken noodle or tomato soup for dinner. It's an easy meal that doesn't require a lot of work, and gets some lurking items out of the pantry.

I'm planning on having a small salad and one slice of cheese pizza. I'm not sure if my husband will be home for dinner. I am sure that all three kids will be home (my college kid doesn't have classes today). My husband usually spends Thursday evenings out with his buddies.

Dinner 10/23

We are having french toast, bacon slices, and hot chocolate with marshmallows. I have bread ends that the kids don't like for sandwiches. I freeze them until there's enough to make a substantial amount of french toast using dry milk, eggs, and some vanilla. I am going to slice the bacon into smaller strips, and cook half of them for the french toast. The other half, I was hoping to make BLT's for my dinner, and one for breakfast tomorrow.

What do to when spouses can't agree??

With financnces, and constantly battle about money???

I'm getting very tired and seem to want to beat my head on a hard door in order to get my husband to agree financially to commit to being debt free. He likes to spend cash/money/debit cards/etc etc.

1. We have separate checking/savings accounts.
2. I put cash into his checking account to do as he wishes. He has to pay for his vehicle, and little bills.
3. I pay for everything else.
4. I maintain my own savings account.


I'm getting tired of having to go "without" anything extra. Let me state that he does his share financially, in paying his bills on time. But he SPENDS some serious cash that is left over, and takes money out of his savings account to SPEND.

The kids don't go without anything. I'd like to get them new sneakers for Christmas, and some "fun stuff". I am feeling deprived, and since I work a lot, I feel that at some point, I should be able to do something that I enjoy with the kids. We did go out for dinner last night, and a movie last week. It was FUN!!!

I'm tired of fighting about money, lack of help around the house when I am working to support the family, and I'm worn out with the constant battles. I even thought about getting my own place (renting), but that would not be in our best interest as a family.

Any suggestions? I'd like to keep my sanity, my family intact, and am thankful that I am capable of providing for the five of us.

I guess I need a nap.

Updates!!

I have a consult for oral surgery for my daughter at the end of the month. I'm waiting to see how much the wisdom teeth extraction will be. I'm hoping to get this done during my VACATION from work (Nov 4th-Nov 16th), since we are staying home. 

My car is getting an oil change and tire rotation. This was done, paid for in cash!!

The cat has to see the vet. Cancelled until November. 

My oldest has to sign up for spring classes, and that comes with a new round of tuition payments. This was done, new tuition payments to start next week. Total cost for 9 credits, 1250 plus the book fees. 

I recieved some paperwork in the mail for our benefit enrollment for 2014 at my job. Our deductible is going from 1500 to 2500. I pay 167 every two weeks for insurance, and 4 dollars for dental coverage. My insurance is pro rated based on how much you make per hour. It's a tier based program. My costs biweekly will be going to 178 dollars, with dental insurance being 7 dollars for a family.  Still have to enroll, will call today for an appointment. 

I am blessed to be working in a medical field as a registered nurse. I'm counting my blessings that we have a source of income to provide for our needs. I did increase my  403B from 6 percent to 10 percent this week!!!!!!!!! I was having 96 dollars taken out every two weeks. I've increased this to 212.00 every two weeks. I'm excited.

The heat hasn't been on yet. I'm waiting until November. We have some chilly nights, but there's lots of blankets, sweaters, and WARM BODIES to snuggle with. It's chilly and we are working on NOT USING THE HEAT. 

I continue to over pay the Wells Fargo a account with 250-300 every two weeks. I'm hoping to continue to do this. It's nice to watch that statement coming in the mail and see the progress. 

I continue to place money into my savings account. I placed 300 dollars in it last week. 

I have a full emergency fund at 1,000. I have about 1,400 in my savings account extra for living expenses (goal 6 months of expenses). 


What's been cooking??

Monday I got up for work, put a frozen lasagna in the oven for dinner. There was nothing left over for packing lunches.

Tuesday, I went home from work at 8:00 AM. I watched some television until 10 AM. Finally went to bed, got up at 3:30 pm for a 4:30-6:00 pm meeting, and I took the kids and hubby out for Chipolte for dinner.

Monday I worked, signed up extra on the schedule, and was paid critical need pay (10 dollars an hour, plus my base rate of pay).

I worked, Sun, Mon, and will work Friday, and Saturday will be my OT shift (provided I don't get called off).

Sunday Dinner

Since I got called off last night due to low census, I didn't work. I got the phone call at 530 in the evening. Oh well. I sat around with the kids, watched some television, and spent some quality time resting.

We have a bunch of left overs in the fridge and freezer.

One serving of beef stew
one bbq pork chop
two servings of rice pilaf
two servings of bean soup in the freezer

Keeping the left overs in check, using them in a timely manner prevents me from having to throw food away, keeps my costs down, and promotes savings for other things we may need in the future.

The pork chop will be cut into smaller pieces. The beef stew will be warmed up on the stove, along with the bean soup. The kids will end up sharing the soup (since they are serious bean eaters), and I may add some of the rice to stretch it out. Everything will be divided up between the five of us.

Dinner 10/19

Since my family finished all but one serving of beef stew, (I can't believe they ate the whole crock pot full), tonight's dinner is going to consist of hot dogs with buns, condiments, and baked onion rings.

I am working four nights in a row, since this is two out of four, and my OVERTIME shift. Nothing fancy, straight up, easy, child pleasing meal, and keeps clean up to a minimum.

Dinner 10/18

Tonight's dinner uses up some lurkers. Beef stew with root veggies, spices, and some soy sauce.

I took a lb of beef stew that I had in the freezer bought on mark down into the crock pot. (I put the rest back into the freezer, about 2 lb worth.) I peeled the last 6 potatoes, and 6 carrots peeled and diced into the crock pot. I chopped two cloves of garlic, and half an lurking onion and placed them into the pot. I added various spices, and two lurking soy sauce packets, along with one bouillon cube and a cup of water.

It will do it's thing and create goodness for dinner tonight.

Dinner 10/16

I had two packages of "pork steaks" in the freezer that I bought a while ago for 1.44 a pound. Both packages were priced 1.66 and I ended getting them. I put them in the oven, baked at 325, and sliced them in smaller portions. I added some onion and BBQ sauce. I steamed some rice, and microwaved some broccoli (one of the opened packages that needed to be used).

What's been cooking??


Last night, my husband bought some ground beef from the store, along with some hamburger buns. We had sloppy joes and potato chips.

Last Tuesday, I made spaghetti and meatballs. Well, I found 8 meatballs in the back of the fridge this afternoon. I've been working and tonight's my fourth 12 hour shift in a row. I'm a little tired.
Anyway, I took out the met balls, and scraped out the last bit of spaghetti sauce, and opened another jar. I'm heating this up, and boiling some spaghetti noodles. This will be dinner tonight.

Dinner 10/09

I bought a small package of boneless pork chops a while back. The total cost was 1.67 and had a mark down sticker on them. It's less than a pound of pork in the package. I also had two pork chops left in the freezer from a previous meal (must of had more then five in the package when they were cooked). I'm going to bread these and bake them in the oven.

I'm going to make homemade breadcrumbs in the blender. I have some frozen bread ends that are going to be used, along with some garlic, pepper, onion, parsley, a little Parmesan, and it will turn into goodness!! Unfortunately, I used the last of the basil last night for meatballs.

I also have some broccoli that we are going to steam, and the kids asked for mashed potatoes. That's dinner folks!!

Change of plans

I posted that we were going to have tacos for dinner tonight. Well, I didn't have any taco seasoning, nor salsa. I figured that I wasn't going to the store for those two things. We are going to have spaghetti and meat balls (using ground turkey, basil, two teaspoons of soy sauce (packets lurking), onion, garlic, onion powder, whole oats (gotta get some nutrition in it), and Parmesan cheese).

It will help get rid of the lurkers (some of the soy sauce, oatmeal, and Parmesan cheese). We are also going to have a small salad with it.
